Prosciutto and Watercress Pancakes

recipe-01 a little oil for frying
1 red onion, finely chopped
1 red pepper, finely diced
1 clove garlic, finely chopped
1 chilli, finely chopped
2 bags or bunches watercress, large stems trimmed
Salt and pepper
8 thin slices prosciutto or Parma ham
 
Dressing :
1 tsp Dijon mustard
6 tbsp chives, finely chopped
4 tbsp olive oil
1 tbsp capers, roughly chopped
shavings of fresh Parmesan cheese
 

Saute the onion and red pepper in a little oil until soft, then add the garlic and chilli. Cook until slightly golden but be careful not to burn. Add the watercress and cook briefly until just soft. Season. Remove from heat and place equal quantities on the edge of Prosciutto slices and roll up. Mix the dressing ingredients and spoon over the pancakes. Finish with shavings of Parmesan cheese.
